Shopping at PCC
My local supermarket, the Cottage Lake Safeway, is a little semi-rural grocery store. It is OK for daily staples but has an unexciting produce department (they do not carry bulk green beans, for cryin’ out loud). We dubbed it the Vacation Safeway when we first moved here, after the Safeway across the street from the lodge in Lake Tahoe, then we went back to Tahoe and saw how grand the King’s Beach Safeway was compared to ours and I wanted to cry a little.
Luckily we have PCC about 20 minutes down the road in Redmond and they have lots of the good stuff.
So without further fuss:

I’m a little disappointed I only have three meals, but it is getting late and I need to get to the store. Plus I’m going to a health care rally in downtown Seattle tomorrow night. I trust I can get the chili ingredients at the Safeway. I’ll be including at least one vegan recipe per “week” in the future.

Note – some shopping items are staples not related to this menu, some items required for the menu I have already. That will be the case for a while. When I get the whole thing worked out, I will make a real shopping list for each menu.
