Whipped Yams with Buttermilk

Such a simple variation of mashed potatoes, but the tangy of the buttermilk is so perfect with the yams.

3 yams, peeled and cubed
1/4 c lowfat buttermilk
2 tbsp butter
s & p

Cook the yams in boiling water until soft, about 12 – 15 minutes, and drain thoroughly. Add most of the buttermilk, the butter, salt and pepper to taste, and whip with an electric beater. Add the rest of the buttermilk if you want them to be a little more wet.
