Baked Potato "Fries"
Serves 3 – 4
30 – 40 minutes
2 large baking potatoes*
1 tsp olive oil
salt and pepper
Preheat oven to 425 degrees.
Cut the potatoes into sticks about 1/4 inch X 1/4 inch thick, lengthwise. Spray large baking sheet with cooking oil. Put potatoes on sheet, sprinkle with salt and pepper to taste, sprinkle on olive oil and toss to coat. Arrange in single layer.
Bake for 25 – 30 minutes, turning once while baking, until soft in center and golden on outside.
* Note to testers: After doing a trial of this recipe, I realized 5 large potatoes divided by 4 probably isn’t a normal serving for most people. I got the amount from a cookbook and didn’t think about it. Also, smaller cut fries came out better than thicker cut. I tried matchstick fries, too, and the ones that came out well were really great but the batch was inconsistent. Go smaller if you want. My son liked the matchsticks the best, but the ones in the center were clumped together, and flipping partially-cooked skinny potatoes was hard. I’m going to try again. I also cut way back on the oil, which I’d never measured before.
