Crispy Fried Tofu Cubes

If you make this once, you’ll make it a hundred times. You’ll eat it plain before it cools, you’ll use it in place of diced chicken, your kids will accidentally like tofu.
8 oz. firm or extra firm tofu
2 tsp canola oil
1 tsp tamari (low sodium tamari is really good, in case you are worried.)
In large skillet, heat enough oil to cover bottom of pan. Slice tofu into approx. 1/4 inch cubes and arrange in single layer in hot oil. Cook tofu until crispy and turn, cooking each piece on at least three sides. Just before removing from pan, sprinkle tamari over tofu and toss, allowing sauce to steam and reduce. Remove tofu and drain on paper towel.
