Week Two

Day OneCan be Vegan if yams are baked
Baked Tofu with Miso Ginger Sauce
(use half of miso ginger sauce. Add additonal juice of 1/2 lemon or rice vinegar to taste, 2 tbsps. water to remaining sauce and use for salad dressing for Day Three.)
Buttermilk Whipped Yams
Steamed Vegetable- we like this with frozen corn, since there is no other grain in this meal.

Day Two
Cheese Beans
Steamed Rice (Make at least 3 extra cups, cooked, for leftovers)
Broccoli
When storing leftover rice, put in uncovered dish in refrigerator

Day ThreeVegan
Spicy Sesame Peanut Noodles
Tossed Salad

Day Four
My Sister’s Squash Chili
Delicious Corn Bread

Day FiveVegan if made without egg
Thai Heavenly Fried Rice

Produce

5 spring onions
1/3 cup fresh coriander (cilantro)
2 shallots
4 medium onions
optional: 1 small carrot
2 ribs celery
1 green and 1 red pepper
garlic
ginger root
1 red or green chilli
1 whole pineapple(*1)
2 large cooking apples
8 – 9 roma tomatoes(*2)
3 yams
butternut squash3
2 lemons (*4)
1 lime
Plus ingredients for a salad on Day Three
Vegetable for steaming for Day One

Dairy

¼ cup white or yellow miso
1 14 oz pkg. firm or extra firm tofu (this is really only enough to feed 3)
2 eggs
Parmesan
1 pint buttermilk
5 tbsp butter
2 cups grated mild, white cheese (Munster or Monterey Jack are best)

Pantry

vegetarian fish sauce (optional)
soy sauce (tamari)
sesame oil
mirin
(*1)or 1 small can pineapple chunks
(*2) or 2 small cans roma tomatoes
1 large can crushed tomatoes
(*3) or 1 can pumpkin or squash puree
Rice
pinto beans, 4, cans (6 cups cooked)
dark red kidney beans 3 or 4 cans (6 cups cooked)
stock
olive oil
1 pound dried or fresh linguini
¼ cup raisins or currants
½ cup raw unsalted whole cashews
2 tsp sesame seeds
yellow corn meal
unbleached white flour
baking powder
baking soda
tahini
2/3 cup peanut butter
honey or agave nectar
(*4) or brown rice vinegar
curry powder
chilli powder
ginger powder
dry mustard
bay leaves
Hot sauce cayenne pepper

Freezer
Small package peas
(*3) small package winter squash

6 tbsp dry white wine or vermouth
