Green Goddess Rice Bowl

My Canadian sister in law is so super healthy, and this is one of her favorite dishes from one of her favorite restaurants, which happens to be in her neighborhood. The closest I’m ever going to get to being as fit as annie is occasionally eating as well as she.

It is likely that the last time she ate meat was at my wedding, when the charming historic inn out in the country put bacon in our “vegetarian” entree. This was something of a disaster for the groom, as well. Believe me, I had done an adequate job of communicating to the staff what I wanted on the menu. So I, the bride, polluted my brand-new husband and sister-in-law. I still haven’t forgiven The Century Inn, but it is a really beautiful place. I guess that after 200+ years you can’t expect them to up and modernize overnight – they brag that the rooms all have private baths.

Serves 4

1 head broccoli, cut into florets
1 head bok choy, torn
1 bunch Swiss chard, torn
1 bunch green kale, torn
6 cups cooked brown rice
1 batch Tahini Sauce
2 sheets nori, torn
1/3 cup sunflower seeds, toasted
1 batch Simple Sauce
½ cup white pickled ginger

Steam broccoli and greens until they are tender and bright green.

Put 1½ cups cooked brown basmati rice in a large rice bowl. Drizzle 2 tbsp. of Tahini Sauce on the rice. Place nori pieces on rice. Arrange the steamed greens and broccoli on the rice around the bowl. Sprinkle toasted Sunflower seeds on top. Drizzle 2 tablespoons of Simple Sauce on the vegetables and rice. Garnish with a small mound of pickled ginger on top. Repeat for each serving.
