Bean Burgers
My family loves Fast Nut Burgers, but they are a little dense for me. If I have some of these in the freezer I can make one for myself when I make nut burgers for the guys, and I am happy. They are so easy that if I have extra beans I’ll throw a batch of these together just to have them in the freezer for nights when I don’t feel like cooking.
(You should see the inside of my freezer. It doesn’t look anything like it did when I first started this blog.)
1 1/2 - 2 cups cooked beans or lentils (one 14 oz can)
1 medium onion, quartered
1/2 cup rolled oats
1 tbsp curry powder or spice mix of your choice
1 egg
small amount of liquid, if necessary
oil if frying
Combine all ingredients except liquid in a food processor and pulse until chunky but not pureed. Add a little liquid – water, stock, soy sauce, wine, whatever is handy – if necessary; you want a mixture that is moist but not too wet.
Let the mixture rest for a few minutes if you have the time, then shape it into patties and let rest again if possible. Cook on hot non-stick griddle or frying pan, or cast iron skillet coated with cooking spray.

Edit: I’m trying a new nutrition calculator, http://caloriecount.about.com. Sparkspeople has been giving funky results; this is the first recipe I re-did with the different calculator, and I’m much more confident in the results. It is also easier to use.
