Crispy Tofu Coating from Refresh
I did not think I had any reason to make another kind of fried tofu other thanĀ Crispy Fried Tofu Cubes, but we’ve been having them for so long that I thought I’d give something else a try. You can read all about the results here.
My experience with nutritional yeast – years ago, when I first started cooking vegetarian and the cook books were earnest and often dreadful – was off-putting to say the least. I put it in the same category with scratchy Alpaca sweaters that still have bits of straw in them and whole wheat pizza dough the consistency of manhole covers. (Perhaps I’m dating myself here.) I’ve looked askance at this recipe for a few months and tonight impulsively said “screw it” and sent the husband on the weird ingredient errand as long as he was out, which prompted about five phone calls from the store.
The results won me over. If they hadn’t, I would not have posted them here.
Crispy Tofu Coating
Makes 6 Servings
1 cup flaked nutritional yeast (Tops didn’t have it and we used regular, unflaked.)
1/2 cup wheat germ
1 tbsp garlic powder
1/4 tsp sea salt
1/4 tsp black pepper
combine all ingredients in a large bowl and mix well.
