Marinated Tofu Cubes

I made this as part of Crispy Tofu Cubes, but can see how the tofu could work, uncooked, on salads or rice for a quick lunch. I also did not make this recipe exactly as written here, as I had a little leftover Simple Sauce and wanted to use it. I made a little of this sauce below and mixed it with the sauce I had and the results were great.

Makes 6 servings

3 1/2 cups firm tofu
1/2 cup apple cider vinegar
3/4 cup tamari
1/4 cup water
1 1/2 tbsp sunflower or sesame oil

Cut the tofu into medium-sized cubes.

Combine the remaining ingredients in a bowl, then pour over the tofu. Marinate for 1 hour. Drain liquid and store in a sealed container in the fridge. Keeps up to 5 days.
